    Abstract

    The purpose of the diploma thesis was to create an e-learning unit in Moodle, to deepen student’s knowledge and understanding of natural dyes. Students encounter them in everyday life as dietary supplements, labelled as E100 food additives. Natural dyes belong to the isoprene, pyrrole, quinone, pyrimidine and pyrane structural types. The diploma thesis presents three major groups of food dyes: flavonoids as the derivates of pyrane, carotenes and xanthophylls as isoprene derivatives, and tetrapyrroles and indoles as derivatives of pyrrole. By analysis and synthesis of data from literature, a list of natural dye labels as food additives E100 were prepared, with an overview of both, medicinal and potentially dangerous effects on health, their chemical structures, and solubility. Chemical contents were connected with topics in biology, home economics and science. Two experiments were adapted for the school laboratory, to support the understanding of carotenoids and antocyanidins solubility in polar and non-polar solvents, and for the preparation of dyed alginate beads. From these materials, an e-learning unit was designed in Moodle environment, consisting of four chapters: Dyes and natural dyes, Natural dyes in nutrition, Physiological effects of natural food colourants, and Alginate. A library of 3D-models of molecules of natural food dyes was also created, with the possibility of rotation and changes in ball, rod, wire and space-filling views. The last section presents two experiments: extraction of dyes and preparation of dyed alginate beads, supported by photographs and a short video clip. Pupils can evaluate their knowledge and understanding by answering to the questions in a quiz. The e-learning unit in Moodle is designed especially as an teaching aid for teachers and pupils to learn about an interesting topic, which has not been presented in textbooks of chemistry in a sufficient detail.
